How do you make egg fried rice without egg, but still with that great sticky consistency? The secret ingredient is... peanut butter! Seems obvious really (is there anything out there stickier than pb)? But you don't want to end up with just peanut butter and rice, because that's weird. Fried rice is a tricky little number, even for Carnists, it looks infuriatingly simple - which it can be with a few tips - but without these tips fried rice can turn into a lump of crappy rice. Don't worry, I've got you with this great Egg Fried Rice Without the Egg Recipe (sure I could just call it fried rice, but that's no fun):
1. How to Make Egg Fried Rice without Egg

Ingredients:
- Half pack of firm tofu, chopped
- Soy sauce
- Rogan Josh seasoning
- 2 cups rice
- Water
- Lemon
- 2 bulbs sliced garlic
- 1 chopped cucumber
- 1 diced carrot
2. Method
1. At least one hour before marinate the tofu in soy sauce and Rogan Josh seasoning.
2. Also make sure to cook your rice in advance so it's cold by the time you're frying it - this is the real secret to good fried rice (no moisture).
3. Fry your tofu until crispy.
4. Meanwhile stir 1 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp lemon and 1 tbsp water in a bowl add chopped garlic - change the measurements to taste.
5. Remove tofu from hot pan.
6. Add the sauce, chopped carrot and cucumber to the pan for 1-2 minutes until garlic fragrant.
7. Add in the rice.
8. Stir until rice hot and fully covered, add tofu.
9. Enjoy! :)
