This vegan burrito recipe is delicious, it's filling, it's healthy and it's easy to make pretty much anywhere in the world. You need minimal equipment to make it - just a pot to cook rice in, a frying pan to fry your veg (and at a pinch you can just use the rice pan instead). A knife is also handy. I made this for the first time whilst staying in Budapest, but it could easily be made pretty much anywhere in Europe, North America, Australiasia, South East Asia etc.... the trickiest part will be getting your hands on the spices - but that's easily remedied!
Most Tesco stores around the world will stock Mexican Fajita spice mixes (or similar). But they're so light and easy to travel with that it might be worth taking a packet or two (or ten) with you. Of course it will be cheaper (and healthier) to make your own spice mix, all you need is paprika, garlic, black pepper, coriander, turmeric, cayenne pepper, cumin, fenal, salt, herbs and yeast extract - okay this sounds like a lot... most of these can be found in most places around the world, but depending on how long you're staying in a place, you're probably not going to want to be stocking up on all the spices. So again it might be worth creating this before you leave in your own packet and taking that with you.

Another great thing about this recipe is it's easily adaptable. I went for mushrooms, onions and peppers, but you could add or replace with broccoli, thinly sliced carrots, tomatoes, red onion, celery, corn - just basically anything you like / can get your hands on. - 2 cups of rice
- 1 pack of smoked tofu
- fajita mix (see above)
- chilli (to taste)
- 3 peppers
- mushrooms
- soy sauce
- 4 cloves garlic
- 1 onion
- sun-dried tomato
- wraps
2. Method:
1. Cook your rice;
2. Meanwhile fry your onion in a large frying pan with some of the fajita mix, olive oil and chilli to taste;
3. Once the onion is cooked, add in the sliced tofu and more spices;
4. Next add in your chop vegetables and soy sauce to taste;
5. Once the rice and vegetable mix are cooked, add the vegetable mix to the rice and stir well;
6. Add in sliced sun-dried tomatoes and thinly sliced garlic;
7. Wrap in burritos and enjoy! :)
